Open Faced Mushroom, Bacon, and Egg Breakfast Sandwich

Have left over mushrooms and don’t know what to do with them? You could let them rot in the fridge or make this sandwich for breakfast.

A slice of French Bread
3 mushrooms, sliced
slice of bacon
fried egg
a slice of muenster cheese
a pat of butter

Directions

Heat a skillet and melt butter in it.

Toast the bread on top of the toaster with the cheese over the bread.

Add mushrooms until cook until tender. Place the mushrooms over the cheese on the toast.

Cook bacon in the skillet until shriveled up and place on top of the mushrooms.

Fry the egg in the same skillet as the bacon and once it’s at the consistency you like remove from skillet and place on top of the bacon.

Makes 1. Calories: 367, Carbohydrates: 19 grams, Sugar: 2 grams, Fiber: 2 grams, Protein: 20 grams.

It’s perfect.

That is all.

And there’s more protein than carbs! How awesome is that! Oh, and it can be a lunch sandwich too. Pair with some fruit and some iced tea or lemonade.
