The OMG Brisket Nachos

We were watching an episode of Psych where there’s a bomb threat in the psych office and all Shawn and Gus were concerned about was the nachos on the table.

“God, that looks good.” The hubby says.
“I guess that means we are eating nachos for dinner tomorrow.” I replied.
“Hells to the yayeah!” The hubby exclaims.

Little did we know that I make amazing Nachos. Like OMG this is amazing.

What makes these nachos different is the use of ground brisket. Most nachos use ground beef, chicken, or here in Texas – pulled pork. I only had brisket in the freezer and thought what the hell, it’s got to taste epically amazing. And I was right.

I did a double layer of tortilla chips, cheese, and brisket. It just made sense.

One thing to keep in mind is this makes enough for 10 people and need to be eaten within hours of being made. It doesn’t really keep. So if you want to do this as a two nighter meal, make enough for one day. Put the pico, cheese, cilantro, and brisket in separate containers, and then put it together the next day.

Does it matter when you eat it? No. Have it as an appetizer, a dinner, a snack (a really big snack), game food.

The OMG Brisket Nachos

1 pound ground brisket
1/2 onion, chopped
3 tablespoons cilantro, chopped
1 1/2 cup Mexican cheese, shredded
1 tomato, chopped
1 avocado, deseeded and chopped
1/2 cup pico de gallo
1/2 bag of tortilla chips

Directions

In a skillet over medium heat, brown brisket. Drain and set aside.

On a baking sheet place a layer of tortilla chips. Place half the brisket on top of the tortilla chips and half the cheese.

Repeat for second later.

Place in oven and bake at 350 for 12 minutes or until cheese has melted.

Place on top of the melted cheese onions, then tomatoes, then pico, and lastly avocado.

Makes 10. Calories: 229, Carbohydrates: 12 grams, Fiber: 3 grams, Protein: 15 grams.

This is absolutely phenomenal. These nachos blows all other nachos out of the water. Everything meshes and compliments each other. The pico gives some heat, while the avocado cools it down.

You can add sour cream if you want. Bryan did. It was hilarious, one side normal, the other covered in sour cream. We literally ate it off the baking sheet.
