I’ve been trying to find ways to make the hubby eat breakfast. Poor thing has to wake up at 6:30 to get to work by 8 because we live an hour away from work.
We don’t have our kitchen in so I can’t exactly wake up with him and make him something while he has a shower. If we did, I totally would do that.
Then it occurs to me that even if I make him these little treats of a breakfast, the likelihood of him forgetting they exist is exponentially high.
But I figured I would still make them. I did make two fruit versions – banana and blueberries. Bryan was more partial to the banana and I the blueberry.
Need extra time in the morning? Whip these up the day before and microwave them. Or whip them up that morning while waiting for the coffee to brew, pop them in the oven while you do something else in your morning routine. That way you aren’t stuck behind the stove supervising the pancakes being cooked.
I originally saw the idea on Facebook as a life hack. In the end, I made them a wee bit different. Totally worth it.
3 bananas, cut into 48 huge slices
Make pancake mix.
Spray a mini muffin tin with cooking spray.
Place a little bit of pancake batter in the bottom of each well.
Place either a slice of banana or 3 blueberries into each well on top of the pancake batter.
Pour enough pancake over the fruit to cover it.
Bake at 350 for 12 minutes.
Makes 48. PER BITE. Banana/Blueberry Calories: 27/50, Carbohydrates: 4 grams/7 grams, Sugar: 1 gram/2 grams, Protein: 1 grams
These were pretty phenomenal. Originally, half the batch was banana, the other half blueberry. It was awesome snack sized. Actually the blueberry one almost tasted like a blueberry muffin.
A minor tip with the blueberry, if you use three blueberries per pancake bite, they will explode and be totally messy. But it is well worth it. I love that burst of blueberry flavor in each and every bite. If you don’t want an overload of blueberry flavor, reduce the amount to 2 blueberries per pancake bite.
The banana pancake bites are just as amazing. This would be perfect for using overly ripe bananas. The riper the bananas, the sweeter the bite. And I love how you can literally see the slice of banana inside the pancake bite when you bite into it.
You could put chocolate chips in it. A nice chocolate chip pancake bite for those with a sweet tooth. Put some whipped cream on top. It’ll be amazing.
