Slow Cooker Tamale Bake

There are days where I don’t have a game plan when it comes to dinner. It’s also getting extremely hot here in Central Texas and without a/c, there is no way I’m slaving over a stove to create an awesome meal. I can’t wait until we have a/c.

Which means, slow cooker time.

No house getting insanely hot to the point of completely unbearable, or using propane. This is a win/win for everyone!

I came across this recipe while looking for a different recipe. Bryan doesn’t really like cornbread and well, I hate cowboy casseroles. Smells like crap, taste like crap. It’s just plain ole crap, unless you make my version.

So I figured, why not try this. It’s technically not cornbread based so it might work. And then my house smelled like yummy tamales while it cooked.

Slow Cooker Tamale Bake

1 pound ground beef
1/2 cup onion, diced
1 garlic clove, chopped
3/4 cups yellow cornmeal
1 egg
1 1/2 cups milk
1 15 oz can corn, drained
1 15 oz can diced tomatoes, undrained
2 tablespoons taco seasoning
1 cup shredded cheddar cheese

Directions
In a large skillet brown and crumble your ground beef with the onion and garlic until the meat is no longer pink drain.

In a large bowl combine cornmeal, egg and milk and mix until smooth.

Add to the cornmeal mixture the corn, tomatoes, taco seasoning, and ground beef mixture and mix well.

Dump mixture into the bottom of a 4 quart crock-pot.

Cook HIGH for 3 hours.

Sprinkle with cheese on top 15 minutes before the food is done and cover.

Makes 8. Calories: 312, Carbohydrates: 33 grams, Sugar: 9 gram, Fiber: 3 gram, Protein: 20 grams. 

OMG. This is just like a tamale in casserole form. I’ve never made tamales, but I hear it’s a long tedious bitchy process. Don’t have time and don’t feel like buying them from a shady Mexican off the side of the road – make this instead. You have most of the ingredients in your kitchen already. It’s so easy to make, and while it cooks you can focus on other things like Candy Crush Saga, or housework, or gardening, or whatever.

That and it has cheese and corn in it. And it doesn’t taste like cornbread, it actually taste like a tamale. It’s perfect.
