I make this when I make Chicken Tikki Masala. It cleanses the palate and is quite refreshing.
1/2 English cucumber, halved and thinly sliced
1/4 cup fresh cilantro leaves
1 tablespoon fresh lemon juice
In a bowl, mix everything together, cover, a refrigerate for 5 hours.
Makes 6. Calories: 4, Carbohydrates: 1 gram.
Who knew cucumber and cilantro works so well together. It’s insane. The lemon juice adds this amazing acidity to the coolness of the cucumber.
